This a tender, succulent cut.
Because chuck is a high-quality, tender meat it can be cooked in a wide variety of ways: roasted, stewed, in casseroles, as minced meat etc. It can also be used to obtain fillets and chops which, although different in appearance from those taken from the rib section, are equally delicious.
Forequarters. The chuck runs from the neck down to the fifth rib.
